Description

Coquitos are small, sweet coconut treats with a slightly crunchy exterior and a moist, chewy interior. This simple dessert is perfect for coconut lovers and makes an excellent pairing with coffee or tea.

 


Ingredients

  • 250 g of grated coconut (unsweetened preferred).
  • 200 g of sugar.
  • 2 large eggs.
  • 1 tsp of vanilla essence.

Instructions

  • Preheat the oven: Heat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper or lightly grease it.
  • Mix ingredients: Combine grated coconut and sugar in a large bowl. Add eggs and vanilla essence, mixing thoroughly until a sticky dough forms.
  • Shape coquitos: Using clean hands or a small scoop, form small balls (about 2–3 cm in diameter) and place them on the prepared tray with some space between each.
  • Bake: Bake for 10–12 minutes or until lightly golden on top.
  • Cool and serve: Let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • Use fresh grated coconut for a more intense flavor or rehydrate dried coconut with a little water.
  • Monitor closely during baking to prevent overcooking.
  • These treats can be stored in an airtight container for up to a week.
