Description
Coquitos are small, sweet coconut treats with a slightly crunchy exterior and a moist, chewy interior. This simple dessert is perfect for coconut lovers and makes an excellent pairing with coffee or tea.

- 250 g of grated coconut (unsweetened preferred).
- 200 g of sugar.
- 2 large eggs.
- 1 tsp of vanilla essence.
Instructions
- Preheat the oven: Heat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper or lightly grease it.
- Mix ingredients: Combine grated coconut and sugar in a large bowl. Add eggs and vanilla essence, mixing thoroughly until a sticky dough forms.
- Shape coquitos: Using clean hands or a small scoop, form small balls (about 2–3 cm in diameter) and place them on the prepared tray with some space between each.
- Bake: Bake for 10–12 minutes or until lightly golden on top.
- Cool and serve: Let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Use fresh grated coconut for a more intense flavor or rehydrate dried coconut with a little water.
- Monitor closely during baking to prevent overcooking.
- These treats can be stored in an airtight container for up to a week.
